Cantonese Yee Mee


Bahan-Bahan:
Yee me (Kuew Teow pun boleh)
Udang
ayam (dihiris)
fish cake
2 ulas bawang putih (dicincang)
Kobis
Carrot
Bunga Kobis
1 sudu teh tepung jagung
1 biji telur
1 sudu teh minyak bijan
2 sudu besar minyak masak
Garam
1 inci halia (dihiris)
1 cawan air rebusan ayam
Cara:
  1. Panaskan minyak dan goreng yee mee hingga agak garing. Ketepikan.
  2. Tumis sedikit bawang putih hingga agak garing dan masukkan ayam, udang, carrot, bunga kobis dan fish cake. Masukkan air rebusan ayam bersama bahan perasa.
  3. Masukkan tepung jagung yang telah dicampur air dan kacau-kacau supaya tepung tidak bergentel.
    Campurkan kobis, biar seketika dan akhir sekali masukkan telur. Tutup api dan kacau.
  4. Tuang kuah ke atas mi dan sedap dimakan panas-panas.

Sizzling Hot Plate Noodles



Hari ni sempat menyinggah di carboot, terjumpa sizzling hot plate . GBP3 (RM18) sepasang, kami rembat je. Lagipun baru lagi, mesti makcik omputih ni tak pakai pun, ataupun dia tak minat makan chinese food.

Sizzling Yee Mee / Thit Pan Mee

Ingredients

  • 150g egg noodles (yee foo mein)

    Sauce ingredients:
  • 150g boneless chicken meat
  • 3 small whole Chinese black mushrooms, soaked
  • 25g carrots, cut into flowers and parboiled


    Seasoning:
  • 1 tbsp oyster sauce
  • 1 tsp light soya sauce
  • 1 tsp sesame oil
  • Salt to taste
  • 1/4 tsp sugar
  • Dash of pepper
  • 1 tsp corn flour
  • 1/2 tsp chicken stock granules
  • 1 cup water or stock

    Method
    Preparation of noodle: Scald noodles in boiling water to soften. Remove and put noodles in a colander and run tap water through it. Arrange noodles on a plate. Add 1/2 tbsp oil and 1/2 tsp sesame oil — mix thoroughly and leave aside.

    For the gravy: Heat 2 tbsp oil, add mushrooms and chicken; stir-fry well. Add seasoning and stock. Bring to a boil and simmer for five to 10 minutes. Add carrots and thickening.

    Heat a hot plate over medium heat until really hot. Bring away from heat and place on a wooden base. Place ready-cooked noodles on hot plate and pour sauce over immediately. Noodles and sauce will start sizzling. Serve immediately with sliced red chillies and cilipadi.

    Cream of Pumpkin Soup Recipe

    Pagi-pagi Ahad, Ikhwan mintak nak makan pumpkin soup macam yang dia pernah makan dekat Nursery dulu. Ayah cari Pumpkin kat Morrisosn habis.. agaknya, sold out baru lepas halloween kot. Ganti dengan butternut squash, asal warna orange. Balik, bukak internet cari resepi.



    Ingredients:

    • 1 pumpkin (4-5 lbs/1.8-2.3 kgs in weight)
    • 4 tablespoons butter
    • 1 large onion
    • ½ pint (285 ml) double cream
    • Salt, pepper and nutmeg
    • 2 pints (1.1 litres) water
    Method:
    1. Wash the pumpkin and then cut the top off to form a lid. Remove the pulp from inside the pumpkin lid.
    2. Remove the seeds from inside the pumpkin and discard.
    3. Scoop away most of the solid flesh from the pumpkin using a small, sharp knife., leaving a sturdy wall of pumpkin, being careful not to cut through it. Put the shell to one side.
    4. Peel and slice the onion, Melt the butter in a large saucepan and add the onion to it. Cook gently until tender.
    5. Chop up all of the pulp of the pumpkin and add to the onion with about 2 pints of cold water.
    6. Bring to the boil and then allow to simmer, covered, for about 20 minutes.
    7. Put the mixture through a blender in several small batches.
    8. Return the mix to the pot and add the cream, salt, peppeer and nutmeg to taste.
    9. Re-heat the soup and pour into the reserved pumpkin shell.
    10. Serve hot.
